Every now and then I throw together something for myself and the lads at work! This is one of their favourites!
It's simple! A sourdough baguette, grilled rib eye, caramelized onions and mushrooms, pepper sauce! Thats its. Now of course there is a few tricks and tips that I'm going to share to make this better!
First things first! Take your steak out of the fridge at least half an hour before you cook it.
This makes one generous sandwich.
1 rib eye steak approx 400gms
1 small onion
Handful of mushrooms
Tsp cracked black pepper
1 spoon instant gravy
Cajun butter
• Tablespoon of butter (softened)
• 1 tsp of cajun spice
• 1 tsp Frank's hot sauce
Combine all until well mixed.
1. For the onions and mushrooms, heat a little oil in a pan over a medium heat, cook the onions until starting to caramelize, add the mushrooms, cook until all the juice evaporates, remove and keep warm.
2. Meanwhile toast the pepper in a pan over a medium heat, add half a cup of water, bring to the boil. Add the gravy powder and boil until thickened. If you need to add more water or powder you can,
3. Next heat a pan over a high heat until smoking. Season the steak and place in the pan with a little oil. When the steak is starting to get nicely browned turn it over and brush it with some of the cajun butter, this will help the colour and flavour.
4. When the other side is brown, flip and brush with the butter, repeat this until the steak has a nice deep brown crust built up, taking care not to over cook the steak.
5. Remove and keep warm. Add the onions and mushrooms back into the pan that the steak was cooked in providing it's not gone black. Add the pepper sauce and remove from the heat.
6. Slice the steak into strips. Cut the baguette in half and butter it. Place the steak on top. Pour over the onions, mushrooms and pepper sauce, close the sandwich and serve with chips and a cold beer.
