ROTW The club sandwich

This week I've decided to share a classic sandwich combination. The iconic triple decker club sandwich.

For years while working in 5 star hotels, the club sandwich was a regular on the lunch menu! It's the topic if great debate amongst chefs! What are the right fillings? Chicken or Turkey? Ham or Bacon? Cucumber? Fried egg? Boiled egg? Not only that, where does it originate? We will leave leave that argument, ironically to the New Yorkers, the union club in NYC claim it as theres while the Saratoga gambling club says its beginnings are there! Some even say that it's an acronym for Chicken and Lettuce Under Bacon. As simple as it seems, this doesn't seem true! The idea that is was born in a club seems much more likely.

Anyway here's my favourite combination for the Club Sandwich. 3 slices of white bloomer toasted 1 grilled chicken breast 2 sliced of crispy bacon 4 slices of tomato 9 slices of cucumber 2 large leaves of butter head or cos lettuce Mayonnaise 1 fried egg! Toast the bread! Heat the chicken and bacon, fry the egg until medium soft. Spread a generous helping of mayonnaise in the toast, layer up the lettuce and tomato topped with the bacon and fried egg, On another slice put the chicken and cucumber. Assemble the triple decker and cut into 4 triangles! Enjoy with a side if fries!
