Recipe of the week - apple and cinnamon scones.

So another week, another recipe. When I was young I remember my grandmother and mother making home made scones or a larger fruit soda bread version, or as they called it 'currant cake'. There was nothing nicer than the smell of fresh scones baking in the oven and me and my brothers waiting impatiently for then to bake so we could spread real butter on them and eat them hot!


Early in my culinary career I work in a deli that have a variety of scones! One of these was apple and cinnamon and it was probably my favourite! That more than likely owes to apple and cinnamon being one of my favourite combinations! These are topped with cinnamon sugar which adds a nice crunch to them. I chose granny Smith apples for these as I think they have a nice crisp freshness!


This is a simple recipe with only a handful of ingredients that are in nearly every cupboard at home! It takes minutes to make and only 15 or 20 mins baking!

Here is what you will need!


225gms of self raising flour

25gms of butter

25gms of brown sugar

Pinch if salt

Pinch of cinnamon

1 granny Smith apple

100mls of milk (add a little at a time, it depends on the water content of the apple!)

Cinnamon sugar


1. Place the flour, sugar, salt and cinnamon in a large mixing bowl


2. Add the butter and grate the apple into the bowl. Rub the mix together till it forms large crumbs


3. Add the milk a little at a time until the dough is smooth and not too sticky!


4. Roll out on a lightly floured surface and cut or shape what every way you want! Place on a baking tray lined with baking parchment. Brush with egg wash and sprinkle generously with the cinnamon sugar


5. Bake in a preheated oven at 180°C for 15 to 18mins until golden brown and they sound hollow when tapped!


6. Allow to cool slightly and enjoy with some real butter and a cuppa.
